Cod parcels
Today's Health Hack is a tasty recipe from The Lean Machines for a healthy evening meal. Their cod parcels are so easy to make and only 300 calories per serving!
Ingredients:
1 tbsp olive oil1 small red onion, thinly sliced1 garlic clove, crushed3 ripe tomatoes (240g) diced1 tbsp tomato puree2 roasted red peppers from a jar (160g), drained and sliced1 x 400g tin cannellini beans, rinsed and drainedSmall bunch of basil (25g), leaves torn2 x 150g pieces thick cut cod loinGreen salad or green vegetables, to serve
Method:
Heat the oven to 200C/gas mark 6 and cut two large square sheets of baking parchment
Heat the oil in a frying pan over a medium heat, add the onion and garlic and cook gently for 5 minutes until softened
Increase the heat, add the tomatoes and cook for 5 minutes until they start to break down. Stir in the tomato puree, peppers and beans and cook for a further 2-3 minutes. Stir in the basil and season to taste.
Spoon half of the mixture onto each piece of paper, just off-centre and lay a piece of cod on top. Fold the paper over the top of the fish and fold the open edges over to make a parcel.
Lay the parcels on a baking tray and cook in the oven for 15 minutes. Unwrap the parcels and serve the contents with a simple green salad or veg.
