Superfood blueberry and sunflower seed muffins
Ripe bananas, blueberries and cinnamon are all the sweetness you need for these - no need for added sugar!
(Makes 12)
Ingredients:
2 organic eggs75ml olive oil3 ripe bananas (mashed) 150g fresh or frozen blueberries (keep 12 for decoration)120ml of milk1 tsp ground cinnamon200g wholemeal flour1 ½ tsp of baking powder150g sunflower seeds100g sultanas1 heaped tsp ground cinnamon½ tsp ground ginger
Method:
Preheat the oven to 180C, grease 8-10 muffin cases and place in a muffin tray
In a large bowl beat the eggs, then beat in the oil then add all the rest of the ingredients and mix well
Place 2 heaped tablespoons of the mixture into the baking cases and top with a blueberry in the middle
Bake for around 25-30 minutes, until they are coloured and firm to the touch.Allow to cool then store in an airtight container.
