Quinoa salad
A simple salad that can also be made with couscous.
(Serves 6)
Ingredients:
150g quinoa grains100ml fresh orange juice150g green beans, trimmed50g frozen edamame beans1 tbsp olive oil1 tsp white wine vinegar1 tsp Dijon mustardHandful fresh parsleySeeds from 1 pomegranate
Method:
Place the quinoa, orange juice and 200 ml boiling water in a saucepan, season and bring to the boil
Reduce heat and simmer for 10 minutes until most of the liquid has been absorbed
Place the mixture in a bowl to cool and to swell
Add the green beans to another large pan of boiling water and cook for 3 minutes
Add the edamame beans, bring back to the boil and cook for 2 minutes
Drain and plunge the beans into cold water to stop them from cooking further
Mix the oil, vinegar and mustard together
Place the cooled, drained vegetables in a serving bowl
Add the quinoa, the chopped parsley and the pomegranate seeds and toss together with the dressing
