Middle Eastern prawns

Spice up your prawns with some Middle Eastern flavours including cumin, cinnamon and paprika.

(Serves 4)

Ingredients:

3 large handfuls spinach1 tbsp olive oil2 garlic cloves, sliced300g cherry tomatoes, halved1 tsp paprika1 tsp cumin1 tsp cinnamon500g raw king prawnsJuice 1-2 lemonsBunch of coriander leaves, choppedPinch of sea salt

Method:

  • Heat a large frying pan, add the spinach and toss frequently, until it has just wilted. Remove and set aside.

  • Add the oil to the pan and gently fry the garlic for 1 minute. Then add tomatoes with the cumin, paprika and cinnamon and cook for another couple of minutes, until they begin to soften and the spices smell fragrant.

  • Turn the heat right up, add the prawns along with a pinch of sea salt and cook, stirring frequently, for 2 minutes, until they are pink and cooked through

  • Add the spinach, the lemon juice and coriander, cook for 30 seconds more, remove from the heat and serve immediately
