Herby feta and pea wraps

This is a wrap containing the ingredients with a tasty omelette instead of a tortilla. Give it a try for a light breakfast or lunch or healthy snack.

(Serves 1)

Ingredients:

1 small egg1 tbsp oil1 tbsp frozen peas, defrosted25g light feta cheese, crumbledA few leaves fresh mint, finely shreddedA few leaves basil, torn or dried basilA handful of parsley leaves, chopped, or dried25g (a handful) of baby spinach or salad leaves

Method:

  • Beat the egg with a splash of water, heat a small non-stick frying pan and oil

  • Add the egg and quickly swirl around to make a thin omelette

  • Cook for 1-2 minutes, then turn out onto a plate on board

  • Mix together the peas and feta, herbs and some of the spinach or salad leaves, shredded

  • Pile on top of the omelette and roll up

  • Slice in half, and serve with the rest of the spinach or salad leaves
