Healthy meatballs

This recipe replaces fatty beef or pork mince with turkey to make your meatballs leaner - and to make it extra healthy try serving with courgetti!

(Serves 4)

Ingredients:

1 quantity of Tonia's best tomato sauce500g extra lean minced turkey1 tsp ground cinnamon1 tsp ground turmeric½ tsp chilli powder (optional)1 onion, finely chopped1 tbsp olive oilSea salt and freshly ground black pepper

Method:

  • Use a food processor to finely chop and bind the minced beef, spices and onion together then form the mixture into 16 equal rounds, the size of a walnut

  • Heat the oil in a large pan over a medium heat, add the meatballs and cook for 7-8 minutes or nicely browned all over. Remove the meatballs to a plate.

  • Add the tomato sauce to the pan and bring to a gentle simmer

  • Return the meatballs, part-cover and simmer for 15 minutes or until the meatballs are cooked through

  • Adjust the seasoning to taste and serve

  • Serve with brown rice (50g per person) or courgette pasta
