Berry quinoa porridge
If you're tired of eating oats, try this different version of porridge, made with quinoa, yoghurt and coconut.
(Serves 1)
Ingredients:
80g cooked quinoa60g Greek yogurt1 tbsp unsweetened shredded coconut½ tsp of cinnamonHandful of mixed berries like raspberries, strawberries and blueberries8 almonds, chopped or whole
Method:
In a bowl, combine the quinoa, yogurt, coconut and cinnamon
You can layer the quinoa mixture with the berries and almonds or just top it
If the berries are not very sweet you could swap some with ½ a banana
