Baked butternut squash
If you are hungry try roasting up a butternut squash in some delicious spices as an alternative to soup - perfect to keep in the fridge for whenever you fancy a nibble.
Ingredients:
1 butternut squash, washed de-seeded and cut into long strips2 tbsp olive oil1 large pinch sea salt1 tbsp sumac½ tsp of chilli flakes1 tsp of turmeric
Or try out your favourite spices!
Method:
Heat oven to 185C
Use ½ tbsp of oil to grease your baking tray
Put the rest in a bowl with all the ingredients and mix really well
Pour onto your greased baking tray and put in the oven for 40 minutes
Eat hot or cold
