Two healthy hummus ideas

Hummus is a great staple to have in your fridge. You can either make your own, or if short of time it’s available to buy in most supermarkets. Besides being an excellent vegan and gluten-free source of protein and fibre, chickpeas also contain exceptional levels of iron, vitamin B-6 and magnesium. It’s quite high in calories though, so make sure you stick to the portion sizes suggested.

Hummus with veggies

2 slices of rye or wholemeal bread2 heaped tablespoons of hummusSliced cucumber Sliced tomatoesSliced red onion

Hummus pitta bread salad parcel

In a small brown pitta bread, spread 1 heaped tablespoon of hummus then place ½ sliced cucumber, 2 sliced tomatoes, handful of rocket leaves and ½ finely sliced red onion
