Swordfish, Greek style
If you're not keen on or can't get swordfish, this recipe can also be made using cod or salmon steaks. The lemon, garlic and capers will really bring out the flavour of whatever fish you decide to use!
(Serves 4)
Ingredients:
4 x 150g fresh swordfish steaks 3cm thick (or cod or salmon steaks)5 tbsp olive oil3 tbsp lemon juice1 clove garlic, finely chopped1 tbsp drained capers, chopped if large1 tbsp freshly chopped oregano1 tbsp freshly chopped flat-leafed parsleySea salt and freshly ground black pepper
Method:
Place the fish steaks in a shallow dish and brush both side with 1 tbsp olive oil and some seasoning
Mix together the lemon juice and remaining olive oil, capers and herbs in a bowl
Season with salt and pepper. Preheat a hot griddle pan or grill, or prepare a barbecue. Cook the fish steaks for 2-3 minutes then turn them over and cook for a further 3-4 minutes or until just cooked.
Serve each steak with a spoonful of the herb dressing drizzled over and serve with fresh steamed green beans
