Super healthy chilli vegetable pot
This is a meat-free feast that makes you feel like you've eaten loads but is actually very nutritious and not too high in calories. Great for getting some of your five a day.
(Serves 5)
Ingredients:
1 tbsp olive oil2 onions, chopped2 garlic cloves, crushed1 chilli, chopped500g carrots, cut into chunks400g canned chopped tomatoes500ml vegetable stock (made from stock cube or stock pot)¼ savoy cabbage, shredded400g can cannellini beansA handful of fresh basil leaves
Method:
Fry the onion in oil in a large pot for a few minutes to soften
Add the garlic and chilli and cook for a couple of minutes
Tip in carrots, tomatoes, stock and cabbage
Add the beans and ½ the basil leaves
Cover and simmer for 20 minutes until the vegetables are tender
Top with the basil leaves and serve
