Smashed avocado bagels with poached eggs
This is a perfect brunch from The Lean Machines to kick off a busy day, loaded with lots of the good stuff! Highly recommended when you've been working out more than usual and need to up your energy levels.
(Serves 2)
Ingredients:
2 medium free-range eggs1 ripe medium avocado (150g)Juice of 1 lime1 red chilli, deseeded and finely choppedSmall bunch of coriander (25g), roughly choppedSea salt and black pepper
To serve:
1 seeded bagel
Method:
Bring a large pan of unsalted water to a gentle simmer. Swirl the water gently and then crack the eggs in and poach for 3-4 minutes until the whites are just set.
Meanwhile halve the avocado and scoop the flesh into a bowl. Add the lime juice, chilli and coriander and roughly smash with a fork; keep it nice and chunky. Season.
Toast the bagel the spoon over the smashed avocado. Top with the poached eggs and serve.
