Toby's salmon kiev
Here's a tasty and healthy dinner option from Toby Huntington-Whiteley that will keep you full and energised.
(Serves 4)
Ingredients:
4 salmon fillets (wild is best)4 tbsp pumpkin seeds4 tbsp sunflower seeds2 eggs, small2 tbsp Cajun spicesPinch of sea salt2 garlic cloves, crushed200g brown rice100g spinach300g green peas
Method:
Add the pumpkin seeds, sunflower seeds, Cajun spices and sea salt to a food processor and blend until the mixture forms a chunky powder consistency. Place the mixture in a shallow bowl and add in the crushed garlic.
In a bowl beat the 2 eggs together lightly
Dip each salmon fillet in the egg mixture and then in the seed crumb and place on a baking tray
Bake in the oven for 15-20mins at 180C
Meanwhile, cook the brown rice as per the cooking instructions on the packet
Either sauté or steam the peas and spinach to serve with the salmon and rice
