Pea, feta and basil dip
This dip recipe by The Lean Machines is great to make as a snack when you have friends or family around but want to keep an eye on what you're eating - it's only 95 calories per serving. Serve with crunchy crudités!
(Serves 4 as a snack)
Ingredients:
350g frozen peas 100g feta, crumbled 1 small garlic clove, crushed Juice of 1/2 lemon Small bunch of basil (20g) Sea salt and black pepper
Method:
Bring a large pan of salted water to the boil, pour in the peas and cook for 3 minutes. Drain, reserving a little of the cooking water.
Tip the peas into a food processor and add the remaining ingredients. Blend until smooth, adding enough of the reserved cooking water to loosen to a smooth purée.
Season to taste and then serve with crudités such as carrot, celery or raw pepper - or if you're really entertaining make these sweet potato and courgette crisps!
