Mustard and tarragon marinated chicken
You can still enjoy a chicken feast while staying healthy with this delicious version that uses flavours of orange, tarragon, garlic and mustard.
(Serves 1)
Ingredients:
1 x 75g skinless chicken thigh50g low-fat natural yogurt½ tsp wholegrain mustard1 small garlic clove, crushedA few fresh tarragon leaves (can use dried)Zest and juice of 1 orange50g green beans, trimmed1 fennel bulb, thinly slicedBlack pepper
Method:
Heat the oven to 200°C/ Gas 6, cut a few slashes in the chicken and season
Put the yogurt, mustard, garlic, tarragon and half the zest and juice of the orange into a shallow, ovenproof dish. Stir together and combine.
Add the chicken and coat with the yogurt mixture. Leave for 20 minutes for flavours to marinate, if you have time.
Cook chicken in the oven for 20-30 minutes until the juices run clear
Meanwhile, put the beans and fennel into a bowl. Add the rest of the orange zest and juice.
Microwave for 3 minutes. Drain and serve with the herby, yogurt marinated chicken.
