Five quick and easy lunch ideas

Here is a selection of our quickest recipes to make for lunch or, if you like, a light dinner. From salad to stir fry these are the most ideal dishes for when you're in a hurry. With these there's really no excuse not to have a healthy meal on the go!

Chicken and peanut butter salad

Grill or bake a chicken breast, chop and mix with 1 tablespoon of peanut butter. Serve on a bed of greens (lettuce or spinach).

Egg salad

Chop two hard boiled eggs into four pieces each and mix with one small sliced red onion, a big handful of rocket or/and spinach leaves, and four halved cherry tomatoes. Drizzle with tahini sauce.

Easy feta and avocado salad

Take one ripe avocado and peel and slice. Combine with half a chopped cucumber, 50g crumbled feta cheese, 1 tbsp olive oil and 1 tbsp paprika. Combine the ingredients in a bowl and tuck in!

Simple stir fry

In a wok or large frying plan place 1 tbsp of organic nut oil and stir fry 4oz chicken breast cut into thin strips with a finely sliced head of broccoli, a sliced red bell pepper, a handful of spinach, one or two finely chopped garlic cloves and a finely sliced red onion. Sprinkle in some chopped fresh herbs like oregano or thyme.

Simple veggie stir fry

In a wok or large frying plan place 1 tbsp of organic nut oil and stir fry a handful of almonds with a finely sliced head of broccoli, a sliced red bell pepper, a handful of spinach, one or two finely chopped cloves of garlic and a finely sliced red onion. Sprinkle in some chopped fresh herbs like oregano or thyme.
