Lemon and yogurt chicken
This is another main meal you can take your time over and enjoy with family and friends.
(Serves 4)
Ingredients:
4cm piece of ginger root, grated2 cloves of garlic, crushed1 onion, finely chopped300ml Greek yoghurt4 chicken breasts, skinned2 cinnamon sticks1 bay leaf6 cloves8 black peppercorns3 cardamoms, peeled and crushedJuice and zest of 2 lemons½ tsp chilli powder1 tsp cumin seedsSalt1 lemon, sliced
Method:
Mix together the ginger, garlic and onion and add to the yogurt. Spread this mixture all over the chicken pieces and leave to marinate for 5 hours (or overnight).
Mix together the cinnamon, bay leaf, cloves, peppercorns and cardamoms. Mix with the lemon juice, chilli powder and cumin seeds.
Make slashes with a sharp knife on the chicken pieces and smear them with the mixture. Transfer the chicken and marinade to an oven proof dish and cook in a preheated oven, at 180C, for about 40 minutes, or until cooked through.
Garnish with the lemon slices and remaining onion rings and serve with a large salad
