Lamb koftas with spicy yogurt tahini dip
You can griddle these on skewers or simply bake in the oven as little patties - tastes delicious with Tonia's salsa and yogurt dips, particularly tahini dip!
Ingredients:
500g lamb mince50g grated sweet potato50g breadcrumbs50g Greek yogurt1 tsp ground cumin2 tsp ground coriander1 tsp turmeric2 fat garlic cloves, crushed2 tbsp chopped mint1 small bunch chopped fresh corianderOil for brushing
Method:
Mix together all the ingredients until well blended. Divide into 16 balls, then roll each ball on a board with a cupped hand to turn them into ovals.
Thread onto 4 metal skewers and brush with oil (or leave as mini patties). To cook on a griddle, heat the pan until you can feel a good heat rising and cook for 3-4 mins each side. Don’t turn until they are well sealed or the meat will stick to the grill or pan. Alternatively, you can bake in the oven turning once on 180’C for 40 mins.
Season if you want, and set aside. Serve the koftas with spiced tahini yogurt and lettuce.
