Lamb and watermelon salad

If you have time before, it’s good to rub the lamb steaks with a little olive oil and the cumin, turmeric, salt and pepper a few hours before or overnight.

(Serves 4)

Ingredients:

4 x 100g lamb steaksSea salt and black pepper2 tsp ground cumin1 tsp ground turmeric2 tbsp. olive oil2 tbsp sesame seeds75g rocket leaves1kg watermelon, peeled and cut into chunks1 small red onion, halved and thinly sliced1 small pack parsleyJuice of 1 lemon

Method:

  • Chop the parsley, onion and rocket and add to your salad bowl along with the prepped watermelon

  • Dress the salad with the juice of a lemon & a drizzle of olive oil, then divide onto 4 plates

  • Heat 1 tbsp of olive oil in a non-stick pan and cook the lamb for 3 minutes on each side, or as you like it

  • Take the lamb off the heat and slice, placing the lamb steak on top of each salad

  • Drizzle with pan juices, lemon juice and sprinkle with sesame seeds. Serve immediately.
