Jumbo prawns with cauli couscous
If you want an alternative to couscous then this is it. The cauliflower has a refreshing taste and it’s a great way to introduce it into your healthy eating plan.
(Serves 1)
Ingredients:
3 florets cauliflower (can use frozen if prefered)A few leaves fresh mintA few stalks coriander, choppedA handful of flat-leaf parsley, chopped15g green-pitted olives (optional)2 cherry tomatoes1 tbsp lemon juice1 tsp olive oilA handful of baby spinach50g cooked prawns (jumbo or normal sized prawns)1 jalapeno chilli, finely chopped
Method:
Put the cauliflower in a food processor or processor attachment, and pulse a couple of times until looks like couscous
Add the herbs, olives and tomatoes and pulse again to combine
Add a squeeze of lemon and season
Mix the lemon juice and olive oil together and season
Arrange the spinach leaves on a plate and scatter the cauliflower couscous over
Drizzle with the dressing and top with prawns and chilli
