Herb omelette
Get started for the day with an omelette that's full of flavour - this will definitely keep you full until lunch!
(Serves 1)
Ingredients:
Knob of butter2 eggs, beatenTiny pinch of sea saltHalf a bunch of parsley, finely chopped (can use dried)Half a bunch of chives, finely chopped (can use dried)
Method:
Melt the butter in a non-stick saucepan, add the eggs and salt
Once the omelette begins to set, sprinkle over the herbs
Fold the omelette over and cook for a further minute until set and serve
