Cumin sweet potatoes

This is the perfect accompaniment to roast meats and we also love to eat them cold the next day.

(Serves 6)

Ingredients:

6 sweet potatoes, scrubbed skin on, halved lengthways1 large onion, thinly sliced horizontally1½ tsp ground cumin1½ tsp ground cinnamon2 tbsp extra virgin olive oil400 g canned chopped tomatoesFreshly ground salt and black pepper

Method:

  • Preheat the oven to 180C/ Gas mark 4

  • Place the sweet potatoes in a roasting pan. Separate the onion rings and mix with the potatoes.

  • Sprinkle with the cumin and cinnamon, and salt and pepper to taste

  • Drizzle with the olive oil, then mix well with your hands

  • Crush the tomatoes with the back of a wooden spoon over the potatoes

  • Bake for 45 minutes
