Cumin sweet potatoes
This is the perfect accompaniment to roast meats and we also love to eat them cold the next day.
(Serves 6)
Ingredients:
6 sweet potatoes, scrubbed skin on, halved lengthways1 large onion, thinly sliced horizontally1½ tsp ground cumin1½ tsp ground cinnamon2 tbsp extra virgin olive oil400 g canned chopped tomatoesFreshly ground salt and black pepper
Method:
Preheat the oven to 180C/ Gas mark 4
Place the sweet potatoes in a roasting pan. Separate the onion rings and mix with the potatoes.
Sprinkle with the cumin and cinnamon, and salt and pepper to taste
Drizzle with the olive oil, then mix well with your hands
Crush the tomatoes with the back of a wooden spoon over the potatoes
Bake for 45 minutes
