Chilli con carne
Serves 4
Ingredients
2 medium onions1 clove of garlic1 tbsp olive oil2 level tsp chilli powder1 fresh red chilli, deseeded and finely chopped1 heaped tsp ground cumin (or crushed cumin seeds)Salt and freshly ground black pepper455g/1lb low fat minced beef3 tbsp tomato puree400g tin/14oz chopped tomatoes1/2 stick of cinnamon400g/14oz tin of red kidney beans, drained4 small jacket potatoes
Method
Source a metal pan or casserole with a lid, which you can also use on the hob. Finely chop onions and garlic, then fry in a little olive oil until soft. Add the chilli powder, fresh chilli, cumin and a little seasoning.
Then add the minced beef and continue to cook, stirring, until it has browned. Add the tomato puree to the beef with the tomatoes, cinnamon stick and wine glass of water. Season a little more if needs be.
Bring to the boil, simmer for 30 mins or until the sauce has reduced. Add the tinned kidney beans 5 mins before the end of the cooking time - they are already cooked and only need warming up.
Serve with a baked potato each
