Chicken balti
Made with plenty of veg and served with brown rice, here's another way to eat curry without piling on the pounds!
(Serves 2)
Ingredients:
2 tsp sunflower oil or 1 tbsp coconut oil½ onion, sliced200g chicken breast, diced2 tbsp balti paste (check ingredients when buying pre-made paste - there should be no added sugar or hydrogenated fats)2 tbsp brown rice175g sweet potatoes, cubed100ml water50g baby spinach
Method:
Heat the oil in a large pan, add the onion and cook gently for a few minutes to soften
Stir in the chicken, season to taste and cook for 5 minutes
Add the balti paste, fry for 1 minute, then add potatoes, water and spinach
Cover, bring to the boil, then simmer for 15 minutes until the potatoes and chicken are tender
