Buckwheat pancakes with banana and cinnamon
Here's another recipe you can chop and change according to your tastes, making with banana or berries.
(Serves 4)
Ingredients:
2 bananas, sliced225g buckwheat flour1 tsp baking powder½ tsp of ground cinnamonPinch of salt275ml of skimmed milk1 large egg, beaten1 tbsp of olive oil
Method:
Mix together the buckwheat flour, baking powder, cinnamon and salt
Add the milk whilst constantly beating, then add the egg, whisking constantly to make a smooth batter
Heat a frying pan, adding a little olive oil for greasing
Ladle some of the pancake mixture into the pan to make a thin pancake
Cook for 2-3 minutes then turn over to brown the other side, set aside and keep warm, whilst you cook off the rest of the pancakes
Serve 3-4 pancakes per person, heaped with banana slices
Alternatively:
You can do them with fruits of the forest:175g fresh berries (raspberries, blueberries, strawberries etc)
Add all the berries you are using together, mash a little with a fork to make a chunky sauce or if you prefer a finer sauce then blitz in a food processor
