Berry quinoa porridge

If you're tired of eating oats, try this different version of porridge, made with quinoa, yoghurt and coconut.

(Serves 1)

Ingredients:

80g cooked quinoa60g Greek yogurt1 tbsp unsweetened shredded coconut½ tsp of cinnamonHandful of mixed berries like raspberries, strawberries and blueberries8 almonds, chopped or whole

Method:

  • In a bowl, combine the quinoa, yogurt, coconut and cinnamon

  • You can layer the quinoa mixture with the berries and almonds or just top it

  • If the berries are not very sweet you could swap some with ½ a banana
