Banana, date and walnut muffins

Suitable for breakfast on the go for to have as a snack, these are full of fruit and fibre to keep you going until lunch.

(Makes 8-10)

Ingredients:

2 eggs (organic if possible)75ml olive oil3 ripe bananas, mashed1 banana, chopped for decoration (optional)120ml of milk1 tsp ground cinnamon150g wholemeal flour1 ½ tsp of baking powder50g dried dates, chopped25g walnut pieces

Method:

  • Preheat the oven to 180°C and put 8-10 muffin cases in a muffin tray

  • In a large bowl beat the eggs, then slowly beat in the oil

  • Add all the rest of the ingredients and mix well

  • Place 1-2 heaped tablespoons of the mixture into the baking cases, and place a slice of banana on the top, if you wish decorate with the chopped banana

  • Bake for around 25-30 minutes, until they are coloured and firm to the touch

  • Allow to cool, once cooled store in an airtight container
