Savoury feta and thyme muffins
Get one of your five-a-day with these homemade savoury muffins, made using onion, courgette and tasty feta cheese.
(Makes 8-10)
Ingredients:
1 onion, chopped2 small courgettes, cut into small cubes or coarsely grated75ml olive oil2 eggs (organic if possible)120ml of milk2 tsp fresh or dried, chopped thyme150g feta cheese, crumbled150g wholemeal flour1 ½ tsp of baking powder
Method:
Preheat the oven to 180°C, and put 8-10 muffin cases into a muffin tray
In a frying pan, add 2 tablespoons of the olive oil and over a gentle heat, add the onions and courgettes till they soften, about 5 minutes
In a bowl beat the eggs adding the remaining oil, oregano and feta
Then add the milk, stir well and then add the flour and baking powder
Place 1-2 heaped tablespoons of the mixture into the baking cases. Bake for around 25-30 minutes, till they are coloured and firm to the touch
They are delicious eaten warm or at room temperature
