Anchovy, sun-dried tomato & avocado open sandwich
This low-carb sandwich gives you lots of tasty flavours, using garlic, basil and olive oil to make it feel like a real treat.
(Serves 4)
Ingredients:
3-5 plump garlic cloves, crushed200g anchovies in wine vinegar100g sun-dried tomatoes1 ripe avocado, cut into chunks1 small bunch fresh basil leavesJuice of 1 lemon2 tbsp extra virgin olive oil4 slices of rye or wholemeal bread, lightly toasted
Method:
Gently combine all the ingredients (apart from the bread) together
Season with some freshly ground black pepper
Pile the mixture onto the toasted rye, finishing with another grind of black pepper and serve
