Anchovy, sun-dried tomato & avocado open sandwich

This low-carb sandwich gives you lots of tasty flavours, using garlic, basil and olive oil to make it feel like a real treat.

(Serves 4)

Ingredients:

3-5 plump garlic cloves, crushed200g anchovies in wine vinegar100g sun-dried tomatoes1 ripe avocado, cut into chunks1 small bunch fresh basil leavesJuice of 1 lemon2 tbsp extra virgin olive oil4 slices of rye or wholemeal bread, lightly toasted

Method:

  • Gently combine all the ingredients (apart from the bread) together

  • Season with some freshly ground black pepper

  • Pile the mixture onto the toasted rye, finishing with another grind of black pepper and serve
