Tonia's sweet and savoury pancake recipes
Makes: 6
Ingredients:
3 large eggs125g wholemeal flour300ml milkPinch of saltA little butter or olive oil to grease the pan
Method:
Beat the eggs and add the milk and salt. Sieve the flour into the bowl and beat simultaneously - keep beating until the batter is smooth. Leave to rest for 15 minutes.

Sweet pancake suggestions
Berry mix (serves 2)
Mash 4-6 raspberries with 4-6 blueberries to make a coulis. Slice 2 strawberries and lay them along the middle of the pancake. Add a tablespoon of Greek yogurt, drizzle with the coulis and enjoy.
Banana (serves 2)
Chop up a banana, dollop with a tablespoon of Greek yogurt and sprinkle with cinnamon
Apple (serves 2)
De-core and roughly chop an apple and put in a saucepan with a tablespoon of water plus a tablespoon of currants or raisins & half a teaspoon of cinnamon. Simmer until the apple starts to soften. Put in the middle of your pancake and serve with a dollop of yogurt on the side.
Savoury suggestion: spinach and feta
(Serves 6)
Ingredients:
2 red onions, sliced500g organic spinach (washed)1 small red chilli finely chopped (optional)250g feta cheese chopped into small squares or crumbled.1 tsp olive oil
Method:
Make up the wholemeal pancakes (as seen at the top of this page)
Add the oil and onions to the pan and simmer for 2-3 minutes then add the spinach in batches so it can fit the pan. Once the spinach has wilted add the feta and chilli and mix well. Cook for a further 2/3 minutes.
Divide equally onto six pancakes and enjoy. I like mine served with some chopped tomato or a salad.
